You can't change splash screen image.

I had the same question, here's a clear guide on how to solve it :
Right click your Playnite icon shortcut (also works for the taskbar, right click the icon then right click "Playnite")
Open Properties
Go to the "Shortcut" tab
Go to the field "Target"
At the end of this text, add a space then add: --hidesplashscreen
Click Apply and now your shortcut doesn't launch the startup logo and only the app itself.
