I had an issue. I add Monkey Island with ScummVM Emulator, I launch the game from playnite, But this action open only the emulator, not the game.
This doesn't happens with beneath a Steel Sky, because when I downloaded the game there was ScummVM preinstalled in the folder with a file .ini.

So I tried to modify the file for Monkey Island, and later I copied and paste the parameters from BASS to Monkey Island Launcher.

Now I explain how to do. It can seems hard, but only long process.

1 - create a file .txt and call it   (game short name).ini
You can find the short name of the game here

https://www.scummvm.org/compatibility/

2 - rename folder of your game with short name.;

3 - place the file in your folder and outside (I did both for precaution);

4 - write this in the file txt and replace Beneath data with your game

[scummvm]
fullscreen=true
updates_check=0
lastselectedgame=beneath
versioninfo=2.0.0

[beneath]
description=Beneath a Steel Sky (v0.0372 cd)
savepath=e:\retrobat\roms\windows\beneath a steel sky\saves
path=e:\retrobat\roms\windows\beneath a steel sky
sfx_mute=false
subtitles=true
gameid=sky
language=it
music_driver=adlib
kbdmouse_speed=3
speech_mute=false
guioptions=lang_Italian

where "gameid" and "beneath" are short names;

5 - Launch playnite and open your launcher options. In the section "actions" add those parameters (replace with the name of your game):

- Type: Executable
- path: (path of your scummvm.exe)
- parameter: -c "..\beneath.ini" beneath (replace with your file name)
- work directory: {InstallDir}

Save and launch the game!

For me works fine. I hope the same for you.

P.S. Don't forget to write the "saves" folder path in the file
