Would it be possilbe to add an option to manually add DLC and expansions to a game, and make it possible to check/uncheck the ones i onw or not own?

Not really. I don't think that's something that official clients (Steam, GOG etc.) expose via an API.

I know, it would be nice if i could enter the DLC myself.

If the game allows you to set the DLC via a shortcut argument (I know some games do this for no-mods), you can add that as an action, though at current time it won't add to your playtime.
